Ingredients
 
 

  • 3.5 oz yellow onion
  • 2 Tbsp extra virgin olive oil (neutral-flavored oil can be substituted)
  • 1 tsp sugar
  • 1 ½ Tbsp rice vinegar
  • 2 Tbsp soy sauce

Instructions
 

  • Finely chop (or grate) the onion.

  • Put the onion in a pan and sauté over medium-low heat for about 3-5 minutes, stirring occasionally, until it becomes translucent and its pungent aroma mellows. (There is no need to cook it until browned.)

  • Transfer the onion to a bowl and mix it with extra virgin olive oil, sugar, rice vinegar, and soy sauce. Let it sit in the refrigerator for at least 30 minutes to allow the flavors to meld as it chills.

Notes

  • The dressing will keep in the refrigerator for up to 1 week.
