Niku Miso (Miso-Flavored Ground Meat)

Ingredients
 
 

  • lb ground pork
  • ½ Tbsp garlic (grated or minced)
  • 1 Tbsp toasted sesame oil

Seasonings:

  • 4 Tbsp miso
  • 2 Tbsp sake
  • 2 Tbsp sugar
  • ¼ tsp ground black pepper

Instructions
 

  • Add sesame oil and garlic to a pan, then turn on the heat. Once the pan starts to warm up, reduce the heat to low and gently sauté the garlic until fragrant.

  • Add the ground pork to the pan and break it up with a spatula, mixing it with the garlic. Increase the heat to medium and stir-fry for about 5 minutes, until the pork is fully cooked and lightly browned in spots.

  • Turn off the heat, then add the seasonings (miso, sake, sugar, and ground black pepper) and mix well. Return the pan to medium heat and cook for about 2 minutes, until most of the liquid from the seasonings has evaporated.

  • You can store it in an airtight container in the refrigerator for up to 4 days.
