Ingredients
 
 

  • 5 oz carrot
  • 1 large egg (about 2.1 oz/60 g, including shell)
  • ¼ tsp salt
  • ¼ tsp soy sauce
  • 1 tsp shaved bonito flakes (katsuobushi)

Instructions
 

  • Cut carrot into thin strips. Crack egg into a bowl and beat it.
  • Heat oil in a pan. Once the pan is hot, add the carrot strips and salt. Cook over medium heat until they become soft, which should take about 1 minute.
  • Pour the beaten egg into the pan, then add soy sauce. Stir-fry the mixture until the egg is fully cooked.
  • Serve in bowls and sprinkle with shaved bonito flakes.

Notes

  • You can store it in the refrigerator for up to 4 days.
