Ingredients
 
 

  • 8 sea scallops
  • ½ Tbsp all-purpose flour (for the scallops)
  • 2 tsp salted butter (0.17 oz/5 g per 1 tsp)

Seasonings:

  • ½ Tbsp sake
  • ½ Tbsp mirin
  • ½ Tbsp soy sauce

Toppings:

  • pinch of ground black pepper
  • green onions / scallions (thinly sliced)

Instructions
 

  • Pat the scallops dry with paper towels. Lightly dust them with flour, shaking off any excess so that they are coated with a thin layer.

  • Heat oil in a pan and sauté the scallops over medium heat for 2-3 minutes until browned. Then, flip them over and cook for another 1-2 minutes until cooked through.

  • Add the seasonings (sake, mirin, and soy sauce) and butter to the pan. Continue cooking, occasionally swirling the pan, until the butter has melted.

  • Serve on a plate and spoon the sauce over the scallops. Sprinkle with pepper and green onions to taste.
