Ingredients
 
 

  • 8.5 oz Japanese eggplant
  • 5.3 oz ground pork (You can also use ground chicken or ground beef.)
  • 1 green onion / scallion

Seasonings:

  • 2 Tbsp sake
  • 2 Tbsp mirin
  • 1 tsp sugar
  • 2 Tbsp soy sauce

Instructions
 

  • Cut the eggplant into bite-sized pieces. Thinly slice the green onion. Mix the seasonings (sake, mirin, sugar, and soy sauce) in a small bowl.

  • Heat oil in a pan over medium heat. Once the pan is hot, add ground pork and cook it, breaking it up continuously to prevent lumps, until cooked through.

  • Transfer the cooked ground pork to a plate and set it aside. Add a bit more oil to the pan, then add the eggplant and sauté until it is lightly browned.

  • Return the ground pork to the pan, add the seasoning mixture from the bowl, and stir-fry everything together until most of the liquid is absorbed.

  • Serve on a plate and top with the green onions.
