Instructions
Cut the eggplant into bite-sized pieces. Thinly slice the green onion. Mix the seasonings (sake, mirin, sugar, and soy sauce) in a small bowl.
Heat oil in a pan over medium heat. Once the pan is hot, add ground pork and cook it, breaking it up continuously to prevent lumps, until cooked through.
Transfer the cooked ground pork to a plate and set it aside. Add a bit more oil to the pan, then add the eggplant and sauté until it is lightly browned.
Return the ground pork to the pan, add the seasoning mixture from the bowl, and stir-fry everything together until most of the liquid is absorbed.
Serve on a plate and top with the green onions.
